Leila's Vegan Chocolate Truffles

1 1/2 cups vegan chocolate chips
8 oz. tofu cream cheese
3 cup vegan powdered sugar (Wholesome Foods or Florida Crystals brand,
powdered sugar from sugar beets, or see Recipe Archive for homemade
variations)
1 1/2 t. vanilla
Garnishes: finely ground nuts, cocoa powder, toasted unsweetened
shredded coconut

Place the chocolate chips in the top of a double boiler, over medium heat, and leave to melt. In a food processor, place the vegan cream cheese, and process for 1 minute or until smooth and creamy. Add half of the powdered sugar and process for 30 seconds. Add the remaining powdered sugar and continue to process the mixture until well blended.

Add the melted chocolate chips and vanilla, and process the mixture to evenly distribute the melted chocolate. Transfer the mixture to a glass bowl, cover, and place in the refrigerator to chill for 1 hour. Using your hands, shape the chilled mixture into 1-inch balls. Roll the balls in the garnishes of choice to thoroughly coat them on all sides. Store in the refrigerator or freezer.

The recipe makes about 5 dozen. enjoy!


Chris and Anna's Pumpkin Bread

1 1/2 c. flour
1/2 tsp. salt
1 c. sugar
1 tsp. baking soda
1 c. fresh pumpkin puree (peeled and boiled, but you could also bake)
1/2 c. vegetable oil
2 "eggs" with Energy Egg Replacer
1/4 c. water
1/4 tsp. nutmeg
1 1/4 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. cloves
1/2 c. chopped pecans (optional)

Preheat oven to 350. Mix together the flour, salt, sugar, & baking soda. In a
separate bowl, combine the pumpkin, oil, "eggs", water, & spices. Pour into
the bowl w/ dry ingredients & mix just until all are combined (don't stir too
much). Stir in the nuts, if you're using them.

Pour into oiled/floured 9x5x3-in. loaf pan, bake 50-60 minutes until done in
the middle. Remove from pan, cool on a rack.

Robin's Low-fat Vegan Chocolate Chip Scones

2 c. Flour
1/4 c. sugar
1 tbsp baking powder
1/4 tsp salt
1 1/4 c. vegan chocolate chips
1 1/3 c. soymilk

Preheat oven to 425. Mix together the flour, salt, sugar, & baking powder. Add chocolate chips, and use a fork to stir in soymilk to moisten the dough. Knead the dough on a floured surface, and spread into thick disk. Cut the disk into wedges and place on baking sheet. Sprinkle with sugar and bake for 10-20 minutes.


Jessica's Vegan Spice Cake with (Vegan) Cream Cheese Frosting

3/4 Cup Bread Flour
1 tsp Baking Soda
1 tsp Baking Powder
1 Cup Granulated Sugar
1 Cup Vegetable Oil
1 tblsp water
1 cup Brewed Coffee
1/4 cup Rasins
1/4 cup chopped Pecans
1 tsp Ground Nutmeg
1 tsp Ground Cinnamon

Icing:
Tofutti Non-dairy Cream Cheese
Powdered Sugar

Preheat oven to 350. Mix dry ingredients and add liquids, mix throughly. Add rasins and nuts, and pour into well greased and floured tube pan. Bake at 350 for approximately 35 minutes. Combine vegan cream cheese and powdered sugar in bowl (and a little water if necessary) and pour evenly over cake. I wouldn't reccomend anything except Tofutti, so be forewarned! This cake is amazing!


Betsy's Basic Banana Bread

3 very ripe bananas
2 cups flour
1 cup sugar
1 cup chocolate chips (optional)
1/4 cup oil (or applesauce)
1 tsp. baking soda
1 tsp. salt

Mash bananas and mix well with oil and sugar. Mix flour, salt and soda together and add to banana mixture.

Mix until the flour is all blended in. if it seems too runny, just add more flour. Pour into pan and bake at 350 degrees until toothpick comes out clean.

I find muffins need about 15-20 where bread needs 30-40 minutes.


Rachel's Famous Ultra-orange Cake

Preheat oven at 350 and grease & flour an 8x8 pan.

mix the dry stuff:
1.5 cups flour
1 cup sugar (or a little less)
1 tsp baking soda
1/2 tsp salt

mix the wet stuff seperately:
1 cup orange juice
1/3 cup veggie oil
1 tbsp orange zest (sometimes i leave this out and it still is good)
1 tbsp white/cider vinegar (to make volcanoes with the baking soda!)
1 tsp vanilla

mix wet into dry, put in pan, bake 30-35 min or until the toothpick says 'i do'.

cool for a bit, then revel in the yumminess.


Betsy's Vegan Pumpkin Pie Filling

10 oz. firm tofu
8 oz. pumpkin puree
1/2 cup maple syrup
1/2 cup sugar
1/6th cup flour
1/2 Tbsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg

Put filling in a vegan crust. Bake 30 minutes at 400, then 30-35 minutes at 350.


Anna's Chocolate Pie; and Variations Thereof

1 Box Silken Tofu
2 cups Chocolate Chips, melted
2 tsp Vanilla Extract
1 vegan crust (pre-made makes your life easier- Keebler Graham Craker Crusts are vegan)

This quick no-bake recipe was a hit at PlanV. The secret is blend the tofu in a food processor for a long time, combine it with the other ingredients and pour into the pie pan, and then let it set in the fridge or freezer for a long time (about 2 hours).

We made this recipe also with bananas, soy cream cheese, and I've heard it's been done with peanut butter as well.
