Dan's Spicy Tomato Rice

1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 cup white rice
2 cups stewed tomatoes
1 cup water
1 small sweet pepper
1 tsp basil
1/2 tsp salt
1/4 tsp pepper
1/8 tsp cayenne

Heat oil and sautée onions and garlic. Add rice and heat for 2 minutes, then add rest of ingredients including water and simmer until done.


Dan's Veggie Pasta Salad

1 pound penne or corkscrew pasta
chopped veggies of your choice, ie.:
1 each red and green bell pepper, chopped
1/3 - 1/3 pound steamed green beans
2 - 3 carrots, sliced and lightly steamed
1 can artichoke hearts, in water, drained and quartered
1 medium red onion, diced

Dressing:
4 chopped roma tomatoes
1/4 cup fresh basil
1 - 2 cloved garlic minced
salt and pepper to taste
about 1/4 cup balsamic vinegar


Cook the pasta and rinse with cold water. Lightly steam/sautée the veggies (with a little olive oil if desired). Mix dressing with pasta and veggies and serve!


Chris's Garlickly Chard

This one is easy - though be forewarned, your bunches and bunches of greens will shrink a lot, and dissapear fast!

Heat some olive oil, add the chard/greens, torn into large pieces, and then the chopped garlic, of which you can't have enough. Carefully stir, and cover to cook. Add a small amount of water if greens are not cooking down. The more you cook, the more it shrinks. Lightly salt to taste.

Any type of chard, kale, spinach, or other green (even collards and dandilions) can very yummily be prepared in this manner. Add pinenuts or red pepper strips for variety. Enjoy!


Anna's Homemade Biscuits

2 cups Flour
4 tsp Baking Powder
1 tsp Salt
2 Tblsp Margarine
3/4 cup Soy milk

Bake at 425 degrees F for 10-12 minutes.

A classic, made vegan. Serve warm with jam and margarine.


Chris's Chili Roasted Potatoes

4 Potatoes, sliced into length-long wedges
2 Tbsp Chili Powder
8 cloves Garlic, minced
3 stalks Green Onion, sliced
3 tbsp Olive Oil
Salt and Pepper to Taste

Toss the ingredients in the oil, and spread flat on baking pan, and bake for 45 min at 400 degrees F, turning once. Cayenne pepper as the situation demands.
