Ingredienti
[ 500 g | 1 lb ] asparagus
[ 100 ml | 1/2 c ] balsamic vinegar
5 tbsp olive oil
salt

Ricetta
Bring salted water to a boil and then add the asparagus for 5-10 minutes or until they reach the desired softness.
Meanwhile put the vinegar in a large shallow pan and simmer until reduced to a third of its original volume. Drain the asparagus and place in pan over low heat to coat with the vinegar (add a bit of water if necessary). Add the olive oil and salt to taste.
Notes: consider serving with fresh goat cheese and a sprinkling of pepper. Roast the asparagus.
