Beef Fajitas

Ingredienti


For the marinade:
2 garlic cloves, minced and mashed
1/8 cup fresh lemon juice
1 tsp ground cumin
3 tbsp olive oil

1 lb skirt steak
1 tbsp olive oil
1-2 bell peppers
1 small onion, thinly sliced
1 garlic clove, minced
6 large flour tortillas, warmed
guacamole and salsa as accompaniments

Ricetta

The marinade:
Whisk together the marinade ingredients in a large bowl. Cut the steak in pieces large enough for the grill or ridged pan and coat well with the marinade. Let the steak absorb the flavors covered and chilled for at least one hour.

Grill the steak or alternatively use a ridged grill pan and cook for 3 to 4 minutes on each side over moderately high heat.

While the steak rests, heat the oil in a large skillet and add the onions, bell peppers, and garlic. Saute until soft.

To heat the tortillas:
Wrap in foil and heat in a 325 F oven for 15 min. Alternatively place the tortillas in a microwave-safe bag and heat in the microwave. They should be uniformly warm and pliable.
