Ingredienti


[ 150 g | 1 c ] almonds
[ 150 g | 1 c ] hazelnuts
[ 200 g | 1 1/4 c ] powdered sugar
2 egg whites

Brutti ma buoni translates to ugly but good. These cookies are from Piemonte (which explains the hazelnuts).

Heat the oven to [ 180 C | 350 F ].

Coarsely chop the nuts.

Beat the egg whites until stiff then fold in the sugar. Add the chopped nuts.

Form into [ 3-4 cm | 1-2 in ] balls on cookie sheet and bake until lightly browned (about 10-15 minutes).

Notes: for a firmer cookie add [ 50 ml | 1/4 c ] water to the sugar (granulated, if you prefer) then bring to a pearl stage (about [ 115 C | 230 F ]). Whisk the hot sugar into the beaten egg whites. Proceed as before.

You could substitute other nuts.

These cookies really like to stick to things when they cook. Be sure to have a good cookie sheet, parchment paper, or silicone mat.
