[ 180 g | 1 c sugar ]
[ 150 g | 10 tbsp ] butter
[ 200 g | 1 c ] flour
[ 150 g | 1 c ] rice flour
[ 10 g | 1 tbsp ] baking powder
1 egg
vanilla
milk
salt

Cream the butter with the sugar, then mix in the egg. Add the sifted flours, baking powder, and a pinch of salt. Continue mixing and gradually add enough milk to obtain a moderately soft batter, about 3-5 tbsp.
Drop cookies onto baking sheet with a spoon or cookie scoop. Bake at [ 180 C | 375 F ] for about 30 min or until pale brown.
Notes: for a softer butter cookie reduce the amount of rice flour to 3/4 c; use wider spacing on sheet as they will spread significantly.
