Ingredienti
[ 125 g | 1 c] flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
[ 235 ml| 1 c ] buttermilk
3 tbsp milk
1 egg
butter for the pan

Buttermilk makes it better.
Combine the dry ingredients. Combine the wet ingredients in a separate bowl. Pour the wet ingredients into the dry ingredients and stir until just blended. Resist the temptation to over stir; it should be a bit lumpy.
Laddle the batter onto a heated and buttered pan or griddle. Brown on both sides. Serve with butter and maple syrup.
Notes: Over-mixing will develop the flour's gluten and create a tougher pancake.Add blueberries, chocolate chips, bits of caramelized sugar, or whatever you can find lying around. You could sell out and replace the buttermilk with milk to make regular pancakes.
