[ 1.5 kg | 3 lbs ] apples
[ 225 g | 1 1/4 c ] sugar
[ 30 g | 1/4 c ] flour
1 pie crusts
1 streusel

Heat the oven to [ 180 C | 375 F ].
Peel, core, and cut the apples into [ 1 cm | 1/2 in ] wedges. Coat with flour.
Place the sugar in a deep sauce pan and pour in enough water to dissolve it (about [ 50 ml | 1/4 c ]). Boil until golden brown in color, swirling the pan occasionally. Add butter. Return to heat stirring until smooth and adding water if necessary. Pour uniformly over apples.
Roll the pie crust dough on the bottom of a [ 25 cm | 9.5 in ] glass pie dish. Add the caramel apples. Top with streusel.
Bake for 70 min, cool for at least 40 min.
Note: good pie apples are Granny Smith and Golden Delicious. To help prevent the sugar in the caramel from crystallizing brush the sides of the pan with a wet pastry brush. Cover with foil if the pie browns too quickly. To keep pie juices from coating the bottom of your oven, place aluminum foil under the pie dish. Consider topping with a second pie crust rather than streusel. (don't forget to add spices).
