Carpaccio

Ingredienti


[ 500 g | 1 lb ] beef filet
[ 75 g | 3 oz ] parmigiano reggiano
[ 75 g | 3 oz ] rucola or arugola
olive oil
lemon juice
pepper
salt
capers (optional)

Ricetta


Thinly sliced raw meet slightly cooked in lemon juice.

Trim the fat from the filet then freeze for 30 minutes.

Meanwhile shave the parmigiano.

Slice the beef into paper thin slices (if you have a Berkel, now is the time to use it). Add the rucola, the juice of half a lemon, olive oil, salt, pepper (just a bit). Sprinkle the parmigiano on top.
