[ 85 g | 3 oz ] sugar
[ 250 ml | 1 cup ] cream
vanilla to taste

Scale the ingredients to the number of portions needed.
Thoroughly whisk the eggs and sugar in a bowl. Meanwhile heat the cream until it just comes to a boil. Pour a third of the cream into the eggs while whisking then mix in the remainder of the cream in a second addition. Return the mixture to the pan and reheat until thick. Refrigerate for at least a couple of hours.
Notes: For a morning custard replace the cream with milk and serve warm with cubes of pain brioche' on top. The addition of orange zest imparts a fresher taste. Consider baking the custartd in a pie shell placed in a water bath for 1 hour at [ 180 C | 350 F ]. Consider adding spices such as nutmeg, cinnamon, or orange blossom water.
