Ingredienti
[ 1/2 kg | 1 lb ] flaky fish
3 tomatoes, chopped
1 small red onion, finely minced
3 cloves garlic, minced
2 jalapeno chilis, minced
[ 250 g | 1/2 lb ] shredded cabbage
3 green onions, finely chopped
8 flour tortillas
1+ lime, juiced

Fish tacos are popular in Baja and San Diego.
Combine the tomatoes, onion, garlic, chilis, some chopped cilantro, salt and lime juice to taste.
Heat the grill or griddle then cook the fish filets for 3 minutes on one side and 2 on the other (fish should be pierced easily by a fork when done).
Let the fish rest for two minutes then chop or flake with a fork. Serve in the warmed flour tortillas, with the tomato salsa, cabbage, green onions, sour cream and extra lime.
Notes: The flaky fish can be something like mahi mahi, halibut, orata, or even catfish. You can also use other fish like tuna, lobster, or shrimp. Consider marinating the fish in a mixture of oil, lemon juice, cilantro, and jalapenos. Some like to batter and fry the fish. Consider a white sauce instead of the sour cream (mayonnaise, lemon juice, minced garlic, and enough milk to loosen).
