Ingredienti
[ 110 g | 1/2 c ] butter
[ 100 g | 1/2 c ] sugar
[ 120 g | 1/2 c ] molasses
1 egg yolk
[ 250 g | 2 c ] flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1 tsp ground cloves
1 tsp ginger
1/2 tsp ground nutmeg
[ 75 g | 1/2 c ] finely chopped crystallized ginger
1 tsp salt
Cookie icing
[ 200 g | 2 c ] powdered sugar
[ 30 g | 2 ] tbsp butter
1/2 tsp vanilla extract
1/4 tsp salt
3 to 4 tablespoons milk

Ricetta
Whip the butter, sugar, and egg yolk until smooth and pale. Stir in the molasses then the remaining ingredients. Refrigerate for 30 minutes.
Heat the oven to [ 175 C | 350 F ].
Roll the dough to [ 1/2 cm | 1/4 in ] then cut into gingerbread men (or cookies, if you prefer). Bake for 10 minutes or until firm. Cool on a cookie rack.
For the icing stir together all the ingredients except for the milk. Whisk until smooth and add enough milk to achieve desired consistency.
Notes: The dough will be sticky. It helps if you roll it in between sheets of wax paper. Dip the cookie cutter in flour to help prevent sticking. Work fast and re-chill the dough in the freezer if necessary.
