Ingredienti
[ 500g | 18oz ] can chickpeas
2 tbsp tahini
2 garlic cloves
juice of a lemon
2 tbsp water
2 tbsp olive oil
salt to taste
paprika (optional)
1 tbsp freshly ground pepper (optional)
1 tbsp pine nuts (optional)
coriander (optional)
ground cumin (optional)
chopped fresh parsley (optional)

Ricetta
Drain and rinse the chickpeas in cold water. Combine all the ingredients in a blender until smooth and creamy. Add enough water to obtain the desired consistency. Taste and adjust for salt or other ingredients (for more bite, add garlic).
Notes on optional ingredients: These ingredients can be sprinkled on top or blended directly into the hummus. The pine nuts should be gently browned in a pan with olive oil before adding. My favorite combinations are pine nuts in the hummus with paprika on top or cumin and coriander with parsley on top.
