Thinly slice (about [ 1 mm | 1/32 in ]) the zucchini lengthwise with a mandolin or meat slicer. Microwave on high for approximately one minute per zucchini. Add fresh butter and salt, to taste. Toss and serve.
You may be thinking, "microwaved zucchini is not a recipe, it's description of hospital food." Well yes, on paper it doesn't seem like it should work but thinly slicing the zucchini crucially changes its texture. It has the same mouth feel as pasta and it tastes like an explosion of pure sweet zucchini. Microwaving until it's just hot keeps it al dente and, contrary to scalding in boiling water, preserves all the taste (and vitamins, if you're into that stuff). Simple and delicious, but don't take my word for it, try it.
