Ingredienti
for [ 25 cm | 10 in ] pan
[ 240 g | 2 c ] flour
[ 160 g | 11 tbsp ] butter
[ 80 g | 3/4 c ] powdered sugar
2 egg yolks
1 tsp salt
lemon zest or vanilla (optional)

Ricetta
Heat the oven to [ 180 C | 350 F ]
Cut the chilled butter into peanut size pieces. Briskly mix together all the ingredients to form a coarse crumb (do not overwork the dough, it should be crumbly). Refrigerate in plastic wrap for half an hour. Press onto the bottom of a pie pan.
If adding a filling that does not require baking, bake the crust for 25 minutes or until golden brown.
Notes: the unbaked crust can be stored in the freezer.
