Ingredienti
[ 500 g | 1 lb ] pork loin
1 large onion
4 tbsp butter
[ 50 ml | 1/4 c ] sherry
[ 125 | 1/2 c ] stock
[ 50 ml | 1/4 ] heavy cream

Preheat the oven to [ 175 C | 350 F ]
In and oven proof pan soften the minced onion with 2 tbsp of butter. Add the pork loin and brown. Place in the oven until the pork reaches [ 75 C | 165 F ], about 30 minutes. (Add water if the onion starts burning).
Remove pork from pan (leave the onions). Return to heat and add the sherry and stock simmering until reduced to 1/3 of its original volume or to desired thickness. Add remaining butter and cream.
Slice the pork loin and serve with sauce.
