Salmon with ginger soy sauce mayonaise

Baked salmon
[ 500 g | 1 lb ] salmon filet
1 tbsp neutral oil
salt

Ginger soy sauce mayonaise
2 egg yolks
[ 250 ml | 1 c ] neutral oil
1 tbsp mustard
1 tbsp vinegar
2 tbsp grated ginger
2 tbsp soy sauce
2 tbsp sesame oil

Preheat the oven to [ 200 C | 400 F ].

Heat the neutral oil in an oven proof pan. Add the salmon skin down and sear for one minute. Place in the oven for 20 minutes or until done (a knife will penetrate the flesh easily).

For the mayonaise whisk the egg yolks, slowly add the oil while whisking (the mixture should incorporate the oil as you add it to create a stable emulsion--it should take about 2 minutes with an electric beater).

Whisk in the mustard and vinegar. Taste and adjust for salt and vinegar.

You only need about half of this mayonaise for the salmon but making a smaller amount is impractical.

Mix in the grated ginger, soy sauce, and sesame oil to the half you intend to use.

Serve over the salmon.

Notes: Yes, it's much easier to use bought mayonaise and just mix in the extra three ingredients. You might want to add scallions as well.

You may want to substitute lemon juice for vinegar in the mayonaise.
