Ingredienti
4 tomatillos
[ 750 g | 1 1/2 lb ] ripe tomatoes
1 small red onion
2 jalapenos
2 cloves garlic
1 to 2 limes
5-10 sprigs cilantro
1/2 tsp salt

Ricetta
Husk the tomatillos and wash them with the tomatoes. Chop both ingredients finely (about [1/2 cm | 1/4 in ]. Add the seeded and minced jalapenos (or green chilis) as well as the minced onion. Toss in the rest of the ingredients: minced garlic, juice from the lime, cilantro and salt to taste.
Note: Heat varies between different jalapenos, and much of the heat is in the seeds and the white inner part. The tomatillos add acidity. The salsa can be prepared in advance but add the salt, lime juice, and cilantro just before serving.
