[ 100 g | 3/4 c ] flour
[ 100 g | 1 c ] fine corn flour
[ 100 g | 3.5 oz ] almonds
[ 100 g | 1/2 c ] sugar
[ 100 g | 1/2 c ] butter
1 yolk
vanilla
grated lemon zest

Ricetta
A traditional cake from Mantova. The crumbs (sbrise) come from breaking the cake. Heat the oven to [ 180 C | 350 F ]
Grind the almonds to a fine flour. Mix with the rest of the ingredients. Form [ 2 cm | 1 in ] balls and drop into [ 22 cm | 9 in ] round cake pan (the balls will break into smaller bits when dropped, the dough in the pan should look coarse and chunky). Bake for 30 min or until light brown. Allow to rest for 1 hour before serving.
Note: traditionally the cake is broken into pieces, not cut. Consider using orange zest instead of lemon. Some like to roast the almonds beforehand.
