Stracciatella
Umbrian egg soup

Ingredienti
For 1


[ 250 ml | 1 c ] broth
1 egg
1 tbsp parmigiano reggiano
nutmeg

Ricetta


A classic, simple umbrian recipe.

Scale the recipe to the desired number of portions.

Bring the broth to a boil.

Meanwhile beat the eggs and the grated cheese together in a bowl. Add one fifth of the broth while whisking with a fork. Then add the remaining broth and a little freshly grated nutmeg.

Notes: you can add parsley at the end. You can add 1 tbsp semolino or bread crumbs per portion to the eggs and cheese. Pecorino can substitute the parmigiano.
