Sugo alla panna e salvia
Sage cream sauce

Ingredienti


1 tbsp butter
7-10 sage leaves
[ 60 g | 3 tbsp ] flour
[ 125 ml | 1/2 c ] milk
[ 50 ml | 3 tbsp ] cream
salt

Ricetta

Excellent with potato gnocchi.

Melt the butter in a small sauce pan then add the finely chopped sage leaves. Fry for 1 min then add the flour and half the milk. Whisk constantly so the sauce remains smooth as the milk is absorbed by the flour. Gradually add the rest of the milk adjusting as needed to obtain the desired consistency. Add cream and salt to taste.

Notes: if the sauce becomes lumpy give it a whirr in a blender.
If you are serving the sauce on gnocchi or pasta don't forget to add parmigiano.
