Ingredienti

olive oil
1 small onion
[ 300 g | 10 oz ] plain pork sausage
[ 500 g | 1 lb ] ripe tomatoes
[ 50 ml | 1/4 c ] white wine (optional)
parsley
[ 75 g | 2.5 oz ] parmigiano reggiano
salt
pepper

Ricetta
Heat a little olive oil in a pan then add the finely minced onion. Cook on high heat for about 2 min. or until golden brown. Add the chopped sausages and cook until browed (about 5 min).
Pour in a little white wine, if desired, and allow to evaporate. Add the chopped tomatoes then allow to simmer for 10-15 min. Adjust for salt and pepper.
Meanwhile prepare whichever pasta you prefer (I like short pasta for this sauce). Cook it one minute less than indicated by package instructions. Drain the pasta and cook it the remaining minute in the sauce. Add some fresh minced parsley and freshly grated parmigiano to taste.
Notes: substitute pecorino for the parmigiano. Also good with olives.
