Ingredienti
1 veal (or cow) tongue
2 anchovies
1 bunch parsley
[ 1 oz | 25 g ] bread crumb
the yolk from a hard boiled egg
1 garlic clove
4 tbsp red wine vinegar
4 tbsp olive oil
salt and pepper to taste

Ricetta
Wash the tongue then boil it in salted water for about 1 1/2 to 2 hours (45 minutes in a pressure cooker).
Allow it to cool then peel off the outer skin. Cut into thin slices.
For the salsa verde: combine the rest of the ingredients in a blender to obtain a coarse sauce. Serve on the tongue slices.
