Zucchini and onion quiche

Ingredienti


1 onion
3 medium zucchini
3 tbsp olive oil
3 eggs
parsley
goat cheese (optional)
puff pastry
salt
pepper

Ricetta


Preheat the oven to [ 200 C | 400 F ]

Cut the onion into thin slices and cook in the olive oil until golden (about 15 min). Meanwhile cut the zucchini in [ 1-2 cm | 1/2 in ] pieces. Add to the onions and continue cooking for about 7 min. Add salt to taste.

Whisk the three eggs in a bowl with and break in the goat cheese (if using). Add chopped parsley some pepper and then the zucchini and onions. Pour into a puff pastry line baking dish. Fold in the sides if there is extra dough.

Cook for 25 minutes or until golden brown on top.

Notes: The recipe is fairly versatile, substitute your favorite vegetables for the zucchini and onions.

Use different cheeses like taleggio or brie, or put the cheese on top of the quiche to form a baked cheese crust.

Add ham or prosciutto.
