3 zucchini
3 tbsp olive oil
2 cloves garlic
[ 300 g | 10 oz ] scallops
[400 g | 1 lb ] pasta
parsley
salt

Ricetta
Cut the zucchini into [ 2.5 cm | 1 in ] size pieces. Add to a heated pan with olive oil, minced garlic, and salt. Cook on medium-high heat until lightly browned (about 15-20 min). Add the scallops and cook until they are just done (3-8 minutes, depending on the size of the scallops).
Meanwhile cook the pasta for one minute less then package instructions. Cook the pasta with the sauce and minced parsley to taste for the remaining minute. Add some fresh olive oil if desired.
